Easy Noodle Recipe

I was discussing recipes with a friend. He told me a story about a recipe of baking noodles that his great-grandmother used to make. It was a dish that was always a comfort to him when he visited her. Unfortunately, it was one of her recipes that she never put on paper and was lost to the family after her death. I was surprised to hear that she never told anyone how to prepare the dish. I always find it sad when we lose a family recipe.

I decided that I needed to make sure my recipes were passed on to my friends and family. I was looking at some of my recipe cards and realized that no one would be able to read some of my notes. So, I’ll start putting some of them in typed format for everyone to enjoy.

So, with all of that in mind, I started looking for a Noodle Bake recipe, one of my favorite baked comfort foods, to surprise my friend and help him distinguish what his grandmother had in his recipe. Food is a powerful brain stimulator and sometimes helps to trigger memories of our past. I am hopeful that this will trigger something for him.

Easy Sour Cream Noodle Bake

  • 1-8 oz package of pasta
  • 1 cup sour cream
  • 6 large green onions
  • 1 cup Cheddar cheese
  • 1 can Tomato soup
  • 2 tbsp. Butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 kg ground beef

Cook the pasta and drain. Put noodles in a large bowl and add 3/4 cup cheese, sour cream and onion and mix with noodles. Season ground beef with salt, pepper and garlic powder. When the meat is brown, drain and add the tomato soup to the meat. Take a large baking sheet and prepare with cooking spray. Now you are ready to put the casserole together. Start with a layer of pasta mixture and then alternate layers of pasta mixture and meat mixture. Cover with remaining cheese.

Bake at 350 degrees casserole for 25 minutes until the top is well browned and sparkling. Casserole is best served with a green salad or any salad of your choice.
